Sufra Dayma: Chocolate Mousse Pudding By Moushira Abdel-Malek Serves 4 Ingredients: 100 gms 70% dark chocolate (roughly chopped) 1 tbsp castor sugar 2 egg yolks 275 ml pouring cream 1 tsp vanilla extract Whipped cream to serve (optional) Method: Heat oven to 140 degrees. Heat cream until almost boiling. Remove from heat and stir in chocolate until it melts. Beat egg yolks, sugar and vanilla in a bowl, then pour over the chocolate cream mixing well. Taste for sugar, if needed. Pour mixture through a strainer into a jug. Divide mixture among four heatproof ramekins or cups and place them inside an ovenproof dish. Pour enough boiling water into the dish to come halfway up the sides of the cups. Lift carefully into the oven and cook for one hour. Remove from the bain-marie. Cool. Chill for four or five hours at least. Serve as is or with whipped cream on top.
