Sufra Dayma: Spicy grilled fish By Moushira Abdel-Malek Serves 4 Ingredients: 4 fish fillets or steaks (firm fleshed) 2 tbsp natural yoghurt 1/2 tsp crushed garlic 1 tbsp lemon juice 1tsp mustard 1 tbsp extra virgin olive oil Salt + pepper + cumin + sweet paprika + cayenne pepper + oregano Method: Pat the fish dry on kitchen paper. Mix yoghurt and lemon juice together. Brush lightly over both sides of fish. Mix together crushed garlic and spices. Coat both sides of the fish with seasoning mix, rubbing in well. Brush a ridged grill pan or a heavy-based frying pan with oil. Heat until very hot. Add fish and cook over high heat for 4 minutes on each side, turning only once. Serve immediately with mashed potatoes and a mixed salad.
