Sufra Dayma: Honey Gingerbread By Moushira Abdel-Malek Ingredients: 250 gms plain flour 1/2 tsp bicarbonate of soda 2 eggs beaten + vanilla essence 125 gms pure honey 125 gms black treacle (or) molasses 50 gms golden syrup 50 gms soft brown sugar 3 tsp ground ginger 1 tsp ground cinnamon 1/2 tsp salt 120 ml whole milk 125 gms butter Method: Sift the flour, bicarbonate of soda and salt into a bowl, making a well in the centre. Place the honey, treacle, syrup, sugar, butter, spices and milk in a saucepan, and heat gently, stirring. Cool slightly, then beat in the eggs. Pour into the flour and beat well. Turn into a greased non-stick baking tray (18-2cm. squared tray). Bake in a preheated moderate oven (175 degrees), for approx. one - one and half hours. Leave in tray to cool slightly, then turn onto a wire rack. Allow to completely cool, then serve.
