Sufra Dayma: Fish in Creamy Dill Sauce By Moushira Abdel-Malek Serves 4-6 Ingredients: 6-8 fish fillets 2 tbsp dill leaves (finely chopped) 1⁄4 cup pouring cream 1 tsp cooking oil 1 tbsp butter Salt + pepper Method: Season fish fillets with salt and pepper. In a large, wide frying pan, heat oil and butter. Add fillets. Gently fry over medium-high heat for a couple of minutes, on each side. Remove with a slotted spatula. Add dill in same pan, stirring in residue for seconds, over low heat, then add cream. Stir until about to reach a boil, then return fish fillets, to combine with sauce, only for one minute. Remove into serving dish, pouring any remaining sauce over fish. Serve immediately with boiled or mashed potatoes and sautéed vegetables.
