Sufra Dayma: Egyptian Minestrone By Moushira Abdel-Malek Ingredients: 200 gms of each : Green string beans + peas + carrots + potatoes (All fresh, prepared and diced) 2 stalks of celery (chopped) 2 tomatoes (cubed) 1 bunch of coriander leaves (chopped) 5 cups stock (or) bouillon cubes added to water 1 tbsp lemon juice 1 large onion (finely chopped) Butter Salt + pepper Method: In a large cooking pan, melt butter and sauté onion. Season and add all prepared vegetables, except the coriander. Add stock. Bring to the boil, simmer covered over medium heat until cooked through. Add lemon juice, coriander and remove from heat. Serve immediately with croutons.
